Recipe #9: Honey/Garlic/Rosemary Grilled Chicken Breasts
Many of my favorite recipes require planning ahead or take a while to bake. This is one of my go-to recipes when I need a quick meal and don’t feel like cooking. There is no need to prep ahead of time, no marinating time, no long baking time, no all-day slow-cooking. These simple ingredients are foods that I always keep in my kitchen, with the exception of the chicken. No special shopping trip required!
The family really likes this chicken. All of them give it 5 out of 5 stars!
When I made this chicken yesterday, I paired it with a sweet potato and some salad with homemade dressing. The sweet potatoes took an hour to bake, but all I had to do was stick them in the oven and walk away. I started preparing the chicken about 20 minutes before the potatoes were done.

Honey/Garlic/Rosemary Grilled Chicken Breasts
Ingredients
- 4 chicken breasts
- 1/3 cup extra-virgin olive oil
- 1.5 tablespoons honey
- 1 tablespoon dried rosemary
- 1.5 tablespoons balsamic vinegar
- 1 teaspoon crushed black pepper
- a pinch of sea salt
- 3 cloves of garlic (minced)
Instructions
- In a microwave safe bowl, combine the olive oil and the honey.
- Microwave the mixture until you see the honey starting to bubble (about 30-40 seconds). Take it out and whisk with a fork until the honey has dissolved. If you prefer not to use the microwave, you can do this in a pot on the stove top.
- Add the rest of the ingredients for the glaze and stir until it has a thick, sticky texture…almost like jam.
- With a brush, coat the chicken breasts all over with the glaze.
- Grill the chicken breasts until thoroughly cooked.
- Enjoy!
