Recipe #17: Paleo Ranch Dressing
I’ve made a paleo version of ranch dressing before, but my family didn’t like it very much. Recently, though, my friend Kathi mentioned that she made Nom Nom Paleo’s ranch dressing, and she said it was the best ranch dressing EVER! I had to give it a try. My husband loves ranch dressing, and I knew he would eat more salad if I could find a good version of it.
We don’t buy the store bought stuff because it contains unhealthy ingredients that our bodies don’t like. Vegetable oil, sugar, soy, MSG, nonfat buttermilk, artificial flavors… no, thank you. This healthy ranch dressing that I’m about to share with you will keep in the fridge for a week. We never make it nearly that long with four boys in the house, though. Hey, at least they like eating salad! They actually love salad. They like to make their own, and they try to make it look professional. They will start with greens, then add tomatoes, carrots, radishes, cucumber, avocado, apples, blueberries, dressing… whatever they can find. It’s pretty awesome.
When I made some of this dressing last week, it was gone in two days. I actually made a double batch. I kept half of it for our family (that’s what disappeared in two days), and I put the other half in a jar and gave it to a friend as a gift. This friend took care of our chickens while we were on vacation. We paid her, but I wanted to do something a little more personal for her, too. I like to give gifts that are homemade, with love. 🙂
The recipe was created by Michelle Tam of Nom Nom Paleo. Her cookbook is the first thing we bought when we changed our diet two and half years ago. It’s got a lot of good recipes, and it’s funny. The recipe can be found on her website here, along with some lunchbox ideas.
Paleo Ranch Dressing
Stir all of the following ingredients together. Pour it over salad or use as a dip, and store the leftovers in the fridge. It should keep for one week. This recipe makes 1 cup of dressing.
- ½ cup paleo mayonnaise (I have a recipe for mayo posted here or you can buy some online here)
- 1/3 cup full-fat coconut milk
- 1 TBS fresh lemon juice
- 1 TBS minced fresh Italian parsley
- 1 TBS minced fresh chives
- 1 tsp onion powder
- ½ tsp dried dill, or 1 tsp fresh dill
- 1 tsp sea salt
- ½ small garlic clove, minced
This recipe could easily be made AIP (Autoimmune Protocol) friendly by using a mayonnaise that is AIP-friendly, like this one.
